Extra Virgin Olive Oil “Picual” of Early Harvest with Denomination of Origin “Sierra de Cazorla”.
This incredible emerald-colored oil has been obtained thanks to a careful selection carried out by Juan José Melero, our agronomist.
Out of 570 plots visited, only 19 have been selected to produce this authentic delicacy.
✔ After having selected ONLY the olives from these plots, this liquid gold has been produced in less than 2 hours after harvesting.
✔To obtain one liter of this liquid gold, it took approx. 10 kilos of olives.
However, ALWAYS by cold extraction and only by mechanical processes.
This means that our extra virgin olive oil is an authentic olive juice, elaborated in a completely natural way without the intervention of chemical products.
Color: intense green color with yellowish reflections.
Aroma: This extra virgin olive oil is fresh on the nose and clean on the palate.
It presents an intense green fruitiness with a medium-high intensity bitterness and spiciness and very balanced.
The fruity nuances are dominated by green tones, fig, tomato, alloza, freshly cut grass, slightly apple and intensely green olive leaf on the nose.
Flavor: Its moderate bitterness and spiciness allow you to add character to the flavor of your dishes by using it raw and in your cooked dishes.
Intense green fruitiness with medium intensity bitterness and spiciness, very balanced.
Its fruitiness presents intense notes of tomato and hints of almond.
Why are our oils so exclusive?
- TRADITIONAL OLIVE GROVES OF CENTURIES-OLD OLIVE TREES: nur olive groves, located at the foot of the Sierra de Cazorla, contain more antioxidants than others thanks to the altitude of our mountainous terrain. The water, the air of the Sierra, the pine, rosemary, thyme and lavender flavored soil, undoubtedly add subtle and unique touches to the quality and flavor of the oils from the Cazorla region.
- EARLY HARVEST. The oil is made with the olives at veraison, at this time we obtain fresher and cleaner oils, its polyphenol levels are higher which translates into better organoleptic attributes, more antioxidants and consequently, more benefits for our health.

The olives are always harvested on the fly and milled on the same day of harvesting, the fruit arrives at the mill intact, which allows for extremely low acidity levels of around 0.1 to 0.2% acidity.
