Grown in plots with little irrigation and following organic practices, this oil stands out for its very high levels of antioxidants, which give it a unique character: intense, balanced and the spiciest of all our oils.

Produced exclusively with olives harvested in October, at the height of the harvest, each liter of this elixir requires twice as many olives(10 kilos as opposed to the usual 5 kilos in ripe harvests).
The result: an early harvest oil of concentrated flavor and extraordinary quality, presented in our elegant white bottles, designed to preserve its freshness and protect it from light.
Ideal to enjoy raw, this organic oil is the perfect choice to enhance the flavor of salads, breads, pates, soups and any dish that deserves a touch of distinction.
Color: green with yellowish reflections.
- This incredible emerald-colored oil has been obtained from ECOLOGICAL olive groves chosen in the CAZORLA region by Juan José Melero, our agronomist.
- After having selected ONLY the olives from these plots, this liquid gold is produced in less than 2 hours after harvesting.
- However, ALWAYS by cold extraction, or as many still say, “cold pressed”.
Aroma: This extra virgin olive oil is fresh on the nose and clean on the palate.
The fruity nuances are dominated by green tones, fig, tomato, alloza, freshly cut grass, slightly apple and intensely green olive leaf on the nose.
Flavor: Its balanced bitterness and spiciness allow you to add character to the flavor of your dishes by using it raw and in your cooked dishes.
Intense green fruitiness with medium intensity bitterness and spiciness, very balanced.
Its fruitiness presents intense notes of tomato and hints of almond.

The olives are always harvested on the fly and milled on the same day of harvesting, the fruit arrives at the mill intact, which allows for extremely low acidity levels of around 0.1 to 0.2% acidity.
